Instructions:

  2. Whisk it up: In a medium pot over low heat, combine the lemon juice, powdered sugar, and cornstarch. Whisk continuously until the sugar dissolves and the mixture thickens slightly.

  3. Temper the eggs: In a separate bowl, whisk together the eggs until well combined. Slowly drizzle the hot lemon mixture into the eggs, whisking constantly to temper them and prevent them from scrambling.

  4. Back to the heat: Return the tempered egg mixture to the pot with the lemon mixture. Increase the heat slightly to medium-low and continue whisking continuously until the mixture thickens significantly and coats the back of a spoon. This can take 5-7 minutes, so be patient and keep whisking to avoid scorching.

  5. Strain and cool: Once thickened, remove the pot from heat and strain the curd through a fine-mesh sieve to remove any cooked egg bits. Transfer the smooth curd to a clean bowl and let it cool completely at room temperature.
